🥓 Rectangular Ham Blocks with Bacon, Cheese & Cilantro

Soft, cheesy, and smoky ham blocks with a fresh hint of cilantro and tomatoes – perfect as a fancy snack, brunch, or party appetizer.

📝 Ingredients (Serves 2–3)

  • Large ham slices – 6–8 (thin but wide)
  • Eggs 3 to 4
  • Bacon bits (cooked crispy) – ½ cup
  • Cheese (cheddar or mozzarella, grated) – ½ cup
  • Tomatoes (finely chopped, deseeded) – ¼ cup
  • Fresh cilantro (chopped) – 2 tbsp
  • Black pepper – a pinch
  • Olive oil / butter – 1 tsp (for pan)

👩‍🍳 Methods

  1. Prepare the Filling – In a bowl, whisk the egg, combine bacon bits, cheese, chopped tomatoes, and cilantro. Season lightly with black pepper.
  2. Arrange the Ham – Butter the pan & lay 2–3 ham slices flat on the pan, slightly overlapping, forming a rectangular base
  3. Pour the filling slowly in the block
  4. Cover the pan & allow it to steam under low flame until the eggs are done.
  5. Serve – Use a spatula & slowly take out the Ham blocks & transfer to a plate.
🥓🍳 Porky Breakfast Platter (Ultimate Oven-Baked Morning Feast)

A hearty, indulgent breakfast with smoky grilled pork sausages, crispy bacon, cheesy baked tomatoes, golden potatoes, and perfectly toasted bread—ready straight from the oven!


📝 Ingredients (Serves 2–3)

  • Pork sausages – 4–6
  • Bacon strips – 4–6
  • Potatoes – 2 medium, sliced thin or into wedges
  • Tomatoes – 2 large, halved
  • Cheese (mozzarella or cheddar, grated) – ½ cup
  • Bread slices – 2–4 (white, whole grain, or sourdough)
  • Olive oil – 1–2 tbsp
  • Butter – for toasting
  • Salt & pepper – to taste
  • Fresh herbs (optional, parsley or thyme) – for garnish

👩‍🍳 Methods

  1. Prep the Ingredients – Preheat oven to 200°C (400°F), toss potato slices/wedges in olive oil, salt, and pepper, halve tomatoes and sprinkle with salt, pepper, and cheese
  2. Arrange on a Baking Tray – Place pork sausages and bacon strips on the tray, add potato slices on a separate section, place tomatoes with cheese on another section, drizzle olive oil lightly over everything.
  3. Bake & Grill – Bake for 15–20 minutes, or until potatoes are golden and sausages are cooked through. Switch to oven grill/broiler mode for 3–5 minutes at the end.
  4. Toast the Bread with butter in a pan or oven.
  5. Assemble the Platter – Place sausages, bacon, potatoes, baked tomatoes, and toast on a large plate or platter. Garnish with fresh herbs for a pop of colour.
🥧🥓 Potato Bacon Pie with Mozzarella (Cheesy, Crispy & Comforting)

A golden, cheesy potato pie loaded with smoky bacon and melted mozzarella—perfect for brunch, snacks, or a cozy indulgent meal.

📝 Ingredients (Serves 2–3)

  • Potatoes – 3 medium, peeled and thinly sliced
  • Bacon strips – 6–8, cooked crispy and chopped
  • Mozzarella cheese – 1 cup, shredded
  • Butter – 2 tbsp
  • Olive oil – 1 tbsp
  • Eggs – 2 (for binding)
  • Heavy cream or milk – ¼ cup
  • Salt & black pepper – to taste
  • Garlic powder – ½ tsp (optional)
  • Fresh parsley or chives – for garnish

👩‍🍳 Methods

  1. Prep the Potatoes – Parboil or steam potato slices for 5–6 minutes until slightly tender
    Drain and let cool.
  2. Prepare the Egg Mixture – In a large bowl, whisk the egg with milk or heavy cream.
  3. Assemble the Pie – Preheat oven to 200°C (400°F), grease a baking dish with butter or olive oil, layer the potato mixture evenly, add the egg mixture and chopped bacon, mozzarella, salt, pepper, and garlic powder, press gently to compact.
  4. Bake – Bake for 25–30 minutes, until the top is golden and cheese is melted.
  5. Serve – Let the pie rest for 5 minutes, slice into portions, garnish with fresh parsley or chives.
