Some dining experiences go beyond just eating – they become stories you carry with you, flavours you can still taste in your mind long after the plates are cleared. My recent collaboration with India Jones, the iconic Asian fine-dining restaurant at Trident, Nariman Point, was exactly that an afternoon of culinary theatre, heartfelt hospitality, and artistry on a plate.

The First Impression – Stepping Into an Asian Tale
The moment I walked into India Jones, it felt like I had been transported into a refined, yet inviting Asian haven. The aroma of sizzling grills, the soft clinking of glasses, and the warm lighting set the perfect stage. The décor whispered sophistication, but it was the energy in the air – that unmistakable buzz of anticipation – that promised something special.
The Chefs Behind the Magic
The culinary curtain was raised by Chef Eduardo from the Philippines – a true master of Teppanyaki magic. With each flick of his spatula and swirl of the wok, he turned ingredients into art. Flavours leapt from the grill with an almost theatrical flair, making the dining experience as much a visual delight as a gastronomic one.




My Tasting Journey – Plate by Plate
Teppan Grouper in White Pepper Sauce
A bold opening act – the grouper was tender yet firm, the white pepper adding a delicate heat that danced on the palate. A dish that commanded attention without overpowering the senses.

Sea Bass in Orange Miso Sauce
If the grouper was bold, this was poetry. Delicate, zesty, and melt-in-mouth, the sea bass was perfectly balanced – the citrus lift of the orange meeting the umami depth of the miso in a harmonious embrace.

Lamb Dimsum & Prawn-Chicken Sui Mai
Little pockets of joy! The lamb dimsum offered a rich, earthy flavour, while the prawn-chicken sui mai was light yet satisfying – both proving why dimsum remains a timeless crowd-pleaser.

Nasi Goreng Bowl
A signature creation by Chef Stefan Francis – this wasn’t just fried rice, it was a carefully curated medley of textures and layers of taste. Aromatic, soulful, and comfortingly familiar, yet with a distinct twist.


The Grand Finale – Desserts to Remember
Two desserts that spoke of tradition and indulgence:
Water Chestnut in Coconut Milk
A cooling, gently sweet classic that washed over the palate like a serene ending to an intense concert.
Deep-Fried Walnut Crepes
Crisp on the outside, decadently nutty within.

All paired beautifully with a refreshing Hawai Colada, which brought tropical notes to the experience.


Beyond the Food – Heartfelt Moments
As much as I loved the flavours, what truly elevated this evening were the conversations. Meeting Executive Chef Arjun Singh Yadava was a highlight we spoke of culinary journeys, inspirations, and the joy of creating experiences that linger in the heart. That shared passion for food made this more than just a tasting; it became a moment of connection. ![]()

A Standing Ovation for Team India Jones
From the artful execution of every dish to the grace of the service team, India Jones at Trident, Nariman Point delivered a flawless dining performance. The blend of taste, technique, and heartfelt hospitality created a memory I will cherish – and revisit, hopefully, very soon.
