That’s exactly how I’d sum up an evening at SFX Lounge at Taj Fort Aguada Resort & Spa, perched beautifully between the timeless walls of Fort Aguada and the endless expanse of the Arabian Sea.

This isn’t just a lounge, it’s a feeling. One that wraps you in ocean breeze, golden light, and a kind of culinary magic you don’t easily forget.

The Setting: Where the Sea Meets Storytelling
From the moment you step into SFX Lounge at Taj Fort Aguada Resort & Spa, you’re transported. The open-air charm, the gentle lull of waves, and the iconic silhouette of the fort at your front, it’s a dreamy Goan postcard brought to life.
As the golden hour sets in, the space transforms. Hues of tangerine and rose spill across the sky, and with every sip and bite, you’re drawn deeper into the moment.

The Sips: An Unexpected Twist on a Classic
I started my evening with their signature cocktail, the INVERTED PINA COLADA.
Forget everything you know about the classic. This one swaps the familiar rum for smoky whiskey, playing up the tropical pineapple and creamy coconut with a bold, unexpected depth. Sweet, spicy, tropical, and complex — it was the kind of drink that instantly grabs your attention and holds it.


The Small Plates: Bold, Beautiful, and Brilliantly Executed
🍤 NOT A SHRIMP TOAST
The showstopper. These are tart shells shaped like prawns, filled with juicy hammered king prawns and bold house-made flavours. Crunchy, creative, and pure genius. I caught myself pausing between bites just to savour how clever and satisfying they were.

🥟CLASSIC PRAWN HARGAO
These delicate dumplings, filled with succulent tiger prawns, were comforting and rich. The kind of dish that warms you from within. The native burnt chilli dip gave it a fiery little edge that kept things exciting.

🍖TANDOORI LAMB SHEEKH KEBAB
A carnivore’s delight. Perfectly spiced minced lamb, grilled over a live tandoor, smoky and juicy with a bold blend of seven Indian spices. This was easily one of my top picks of the evening. Satisfying, full-bodied, and unforgettable. Served with a fiery and flavourful chilli-garlic chutney originating from the vibrant state of Maharashtra – Theecha.


🧆 MEZZE SAMPLER
For a slower pace and easy conversation, this platter is perfect. falafel, edamame hummus, baba ganoush, labneh, and warm, pillowy pita – it’s a medley of textures and flavours from the Middle East that paired beautifully with the seaside setting.


The Sweet Finish: A Dessert That Tells a Story
🍨NOT A LAVENDER
A name that piques curiosity and a dessert that delivers beyond expectation. This lavender mousse brought together northern and southern fruity textures in a way that was subtle, floral, and deeply elegant. Not overpowering, not predictable. Just the kind of sweet surprise that stays with you.

Every dish carried the signature of Executive Chef Dibyendu Roy – playful creativity rooted in technical finesse. There’s a clear passion here for creating not just meals, but moments. Dishes that balance boldness with grace. Ideas that stretch across continents, yet feel perfectly at home by the sea.
